香港的米其林应该是台湾最方便也是最便宜摘星的地区，相较于日本的米其林，香港米其
林餐厅的价位更低一些，像是非常知名的添好运还有来自台湾的鼎泰丰，都有一颗星的评
价。不过香港米其林自推出以来，不时有被质疑评价标准较低的现象。2013年的10月去了
趟香港，吃了不少米其林餐厅，就我个人的感想而言，二星与三星的餐厅较无问题，可一
星的餐厅不免有点争议，有一些一星餐厅，我吃完之后总觉得没有一星的水准，反倒是没
有得星也没有获得轮胎人推荐的餐厅还胜过它，因此，我想香港米其林遭人怀疑也是其来
有自。
米其林评鉴走入亚洲，为了避免人称以西方口味来吃亚洲食物的诟病，可以发现上选的餐
厅不少都是当地所属料理的餐厅，像日本米其林得星的多半是怀石、割烹或握寿司，香港
则是以粤菜餐厅为主，可是能得到三星荣誉的，这两年来也仅有隆景轩而已。其他三星餐
厅还是以欧陆料理为主，不过在2014年还多了家日本料理，这也足可见香港的国际化程度
，充满了许多不同国家的料理。
2014年的三星榜单，最大的变化就是上榜多年的Caprice降至二星，去年十月去吃的时候
，便稍有所感。只是令人意外的是本来二星的厨魔，竟然晋升为三星，同是十月的时候也
吃了厨魔，当时也仅是觉得有二星的水准，但尚不及三星。而那家觉得没有一星等级的餐
厅，在2014的榜单里也跌落星辰，不知跑哪去了，就像当年的镛记烧鹅一样。只是米其林
评鉴终究是参考而已，以镛记来说，即使它没有了那一颗星，依旧不减名气与生意。只是
有得到米其林星级评价的餐厅，对其生意还是有加分的作用。至于是不是真的有那么好吃
？我想还是得看个人口味，不过就我吃过伦敦、法国的米其林后，回过头看亚洲的米其林
评鉴，还是认为日本的评鉴应该是比较公正一些，餐厅所获得的星等与实际品尝的感想不
会让人有太多的落差。
米其林三星餐厅 5家
完美而登峰造极的厨艺，值得专程前往，可以享用手艺超绝的美食、精选的上佳佐餐酒、
零缺点的服务和极雅致的用餐环境，但是要花一大笔钱
