Native State of Mind under the Steel
究竟大家口口声声的“工业风”该是什么样子?老旧的仓库挑高、打掉的墙面、外露的钢
筋、水泥与黑铁的材质?带着这一长串疑问,来到玛莎一手打造的离线咖啡馆,当阳刚冰
冷的结构遇上本土人文的温婉,呈现出纽约工业风底下的台湾味,这是一个有趣的概念,
也是老板玛莎埋藏心底已久的梦想。
What should ‘Industrialism’ be like? Is it an old warehouse with elevated
ceiling, destroyed walls, exposed steel, mixed materials of cement and black
iron? With this long list of questions, I arrive at Offline Café built by
Martha. The cold masculine structure meets the local humane gentleness which
generates the Taiwanese style of New York Industrialism. Such interesting
concept has been the dream hidden in Martha’s heart.
一张多人坐长桌,店内正播放著90年代英伦摇滚,你漫无目的地左顾右盼,点了杯拿铁,
开始发呆放空,随后,你注意到这空间处处是宝物,抬头看了看挂在墙上的披头四经典海
报,接着,不知不觉,你开始观察起身旁一个个和你气味相投,却彼此陌生的人们,你们
正一起享受着咖啡厅老板的品味、一起天马行空,然后可能一起孕育出意料之外的新思想
。
近年来台湾除了随处可见的连锁品牌咖啡店,许多独立咖啡馆也纷纷出头,甚至不少名人
也都投入了独立咖啡店市场,五月天的玛莎就是其中之一。位于华山艺文中心红砖区的离
线咖啡便是玛莎一手打造的工业风咖啡馆,“想要经营咖啡馆是想满足自己不能从五月天
身分中得到的满足。”玛莎这样说著,于是他放下名人的包袱,将自己个人的品味和理念
化作具体的实践。
为什么要去咖啡馆?因为想坐下来好好和朋友叙叙旧,可能要消磨等待下一场电影的悠闲
空档,或者只是逛街累了想找个安静舒适的地方轻松地听听音乐、翻翻杂志。咖啡馆之于
一座城市的意义是什么?也许不过是提供都市人一个跳脱忙碌、释放疲劳的收容所。“咖
啡厅应该要有社交中心的功能!像法国老字号花神咖啡馆那样。”玛莎认为,咖啡馆的定
位不该只是一个吃吃喝喝的餐饮场所,更是老板个人气息的展现,包含老板的美学观与生
活观,开咖啡馆就像是把自己所喜爱、珍藏、想分享的一切拿出来分享,然后吸引到一群
认同你的气氛和概念的人们聚集在一起,除了有机会彼此交流,激荡新思维之余,也可以
让社会上既有的议题在这样一个空间内发酵。
在台湾独立咖啡业者大多选择走日系杂货小清新风格的同时,离线咖啡走的是较少见的工
业风,以黑铁、木头、水泥为主要素材,为了不让整体氛围过于冰冷,也不能太过温馨,
玛莎和室内设计师好友孙瑞婷经过多次讨论修改、调配三种素材比例。店内的空间大,座
位却不多,因为玛莎认为独立咖啡店的立意不在于追求商业的极大化利益,而该是背后的
精神内涵。因此,玛莎告诉我们店的中间本来想摆的是高脚椅,但是后来发现一摆了高脚
椅,其他客人的视线就会被挡住,无法一窥整间店的全貌,反而限缩了顾客的视野,以及
和空间的连结感。“站着喝咖啡反而更悠闲啊!而且从另一个角度欣赏整个店面也是很棒
的经验。”于是玛莎决定仿效欧洲许多咖啡馆,将中间的位置空下来当作让客人站着喝咖
啡的吧台,为台湾民众带来另一种型态的咖啡馆经验。
离线咖啡除了寄卖杂志与CD之外,玛莎告诉我们他最想打造的是一个Select Shop的概念
,挑选自己喜欢的厂牌合作,将自己所认同的品牌聚集在一个空间。“这里的观光客很多
,所以我们必须要做好台湾的门面。”同时,玛莎也希望打造一个有台湾气氛的品牌,呈
现台湾自有的格调与特色,例如和Sense 30的脚踏车或罗文嘉的水牛书城合作,在纽约气
息浓厚的工业风空间中注入一股台湾人文气质。
One enters the café and would see a long table of many seats and hear
Britpop of the 90s, then order a cup of latte and start to relax. You would
see treasures everywhere in this space and look up at the ceiling where there
is a classic poster of the Beatles. Unconsciously, you begin to observe
like-minded strangers sitting around you; however, you are all enjoying the
taste of the coffee and daydreaming to breed new and unexpected ideas.
In recent years, chain coffee shops have sprung up ubiquitously through
Taiwan; in addition, many independent cafes have been founded. Moreover, many
celebrities have participated in the individual café business; Martha of
Mayday is one of them. Offline Café is located at Huashan Creative Park. “
The purpose of opening this café is to achieve the satisfaction that I couldn
’t get from being a member of Mayday”, said Martha. Hence, he lets go of
the burden of being a celebrity to bring his personal tastes and ideas into
concrete practice.
Why does a person want to go to a café? One might want to sit and have a
chat with old friends kill the time waiting for a movie, or want to find a
quiet place to enjoy listening to the music or read a magazine after a day of
shopping. What is the significance of a café in a city? Perhaps it is simply
a shelter provided for the people to escape the busy city and to release
their tiredness. “A café should be a social center, just like Café de
Flore in France.” In Martha’s opinion, a café should not be just a place
for eating and drinking; instead, a place where the owner expresses his
personal taste in atmosphere, including his view of aesthetics and that of
life. Running a café is to share one’s favourite things and gather with
people who have similar habits and interests. Besides providing an
opportunity for communication and brain storming new thoughts, it also allows
existing topics to develop in this society.
The independent café in Taiwan mostly follows the Japanese style; however,
Offline Café chooses the industrial style with iron, wood, and concrete as
the main materials. In order to prevent the atmosphere being too old or too
warm, Martha has several discussions with the designer Re-Ting Sun to
finalize the chosen materials. The interior space is large; however, there
aren’t many seats because the main purpose for this café is not to pursue
the maximum profit; instead, the most important issue is the spirit of
running this café. The original idea is to place high chairs in the middle
of the space; however, these high chairs would block other customers’ view
and prevent them to see the entire interior space. “Drinking coffee standing
is another style of leisure. Besides, one could enjoy the entire space from a
different viewpoint, which is another great experience.” Thus, Martha
decides to apply this concept from the European café and let customers stand
at the counter to drink coffee. This brings a totally new experience for
people in Taiwan to enjoy drinking coffee.
In addition to magazines and CDs being on for sale at Offline Café, Martha
wants to build a select shop concept store at this café that she could
co-work with her favorite labels and bring them all together in one space. “
There are a lot of tourists here, thus, we must give a good impression of
Taiwan.” Besides, Martha also wants to create an atmosphere of the Taiwanese
brand to show Taiwan's own style and characteristics, such as working in
cooperation with Sense 30, the bicycle shop, or the Buffalo Bookstore of
Wen-Jia Luo; hence, to infuse Taiwanese humanity into the thick atmosphere of
the New York industrial space.
